Latterie di Napoli was born to satisfy an increasingly frequent market request for fresh mozzarella production all around the world, in order to avoid stressing the product freshness during the long distances with transport and logistics. Latterie di Napoli create frozen semi-finished products with 12 months of shelf life, which can be shipped all over the world. In the Dairy Labs, the semi-finished product is spun and formed to give birth to fresh mozzarella every single day depending on your needs

 The concept

Dairy Lab Latterie di Napoli is an innovative concept starting from the highest quality raw material applied to the dairy-gastronomic sector. , In 10 square meters, the company is able to build a mini-dairy lab, also with unqualified personnel, which will be trained during the design phase. Only the best Italian buffalo milk from carefully selected farms, after being subjected to strict controls, is destined for transformation into a stable semi-finished product (curd) frozen with cryoscopic liquid nitrogen technologies. The curd is first strictly stored at -20 ° and from this moment on, it is ready to reach any destination in the world to “melt” into the best mozzarella Made in Italy then. The structural characteristics of this curd about -humidity -the unique nature of its raw material -and the manufacturing processes make this product perfect and versatile for the most varied needs for operators in the HO. RE.CA. and Retail, producing mozzarella, burrata and pizza cheese.

A real “mini-dairy” able to offer in a very short time a fresh mozzarella always available, for all the different catering and commercial needs, returning in full, the unmistakable taste of Made in Italy.

Sustainability

Letterie di Napoli is a sustainable project, the mini-dairies do not produce special waste and reduce the use of water and energy, using only one machine for the whole production. With the possibility of producing even small quantities, there is no waste and the product served is always fresh.
Production starts from a minimum of 6kg per batch of 15 minutes
